    I honestly have a hard time believing someone is so deficient in basic nutrition to think that eating three sticks of butter in collard green is anything but healthy. :shrug:

    I love collard greens (or any greens really). Sans butter, greens are very healthy and cheap too. I make mine with bacon (drained of fat) and put vinegar as a topping versus butter. YUMMY!

    Many people cook 'em with ham hocks or ham shanks, but I think now, I may try cooking them with turkey necks, with a few strips of bacon for flavoring as a healthier option. I also like to add turnips, carrots and onions to boost the texture.

    AFAIK, the healthiest diet found to date has been the Mediterranean, however, many of the elements in that diet can be readily adapted to make non-Mediterranean meals healthier. Just switching to olive oil can make a big improvement. In all likelihood, the biggest danger comes from a lack of variety in one's diet, more than anything else.

    It's more like let's get all bent out of shape and ruin someone over comments that were made decades ago and in the privacy of her own home. If this had been something like what Mel Gibson ,Imus or Mr . Jesse "hymie town" Jackson did I could understand. But this isn't even in the same ballpark.

    On second thought I don't have much of a problem with Dean not revealing her own health problems. After all, I don't recall her bragging about being in tip top shape or claiming that her recipes contribute to her health.

    I have no problem with Paula Dean wanting to push an unhealthy menu of food that she specializes in. After all, most of the food they show on cooking shows or published in celebrity cookbooks is eaten about like movie theatre popcorn.

    As in, once a week or two weeks or more likely once a month.

    Well now wait a minute. This whole obesity thing really took off after it became economically feasible to have an astoundingly varied diet, and as it became more and more popular to eat 'ethnic' foods from around the world. Maybe an older-style same ol'-same ol' diet would discourage larger portions that lead to larger pants size.

    Obesity is a combination of processed foods hitting the market en mass after WWII, Fast food replacing home cooked meals, cars becoming more and more affordable and people doing less physical activity.

    To prove this, there's been a rise in what passes for obesity* in Japan over the past two decades, since our fast food chains have started hitting the streets of Tokyo, Osaka, ect. In a traditional Japanese meal, the majority of carbs for the day comes from white rice, and most Japanese walk at least to and from the train stations every day.

    *To put it perspective, I am 5'6", 170-ish on a good day, and I fit into a 3XL or 4XL T-shirt. Pants are hit or miss, and I stopped crying over the cute shoes I couldn't wear after the first three months. :lol: And there are genuinely fat Japanese girls that are obvious obese....I feel real sorry for those lot, because Japan is even less forgiving than we are of any deviation in looks. :no:

    Most of the obese people I know eat a limited variety of meals, and all of it is stuff that's high fat, high calorie, in big portions. I rarely see fat asses frequenting ethnic places, instead, they're in fast food joints and diner style places.

    The addition of fast and/or restaurant food is one way more variety has been added to modern diets. Plus due to improved transportation, preservation, and breeding for hardiness, we've actually got more fresh and minimally processed foods than previous generations.

    I use ham hocks in beans when I make them in my crock-pot. Never thought of turkey necks, I may try that.

    try a table spoon or two of apple cider vinegar in the pan. It helps suck up the grease.

    Works well with sausages too-although i prefer making them on a cookie sheet in the oven rather than frying.

    Look at the variety of your typical McDonald's menu. Most of it consists of a quarter pounder and fries, with slight changes to the bun and toppings. Compare that to what we were eating 100 years ago, and you'll find that our diets consisted of less meat and more vegetables. Certainly, there are a wider amount of foods available, but you don't see people taking advantage of that in numbers that match those who eat large quantities of foods that should be avoided for regular consumption. I've eaten in a lot of McDonald's, and a lot of sushi bars, and I see way more fat people in McDonald's than I do in sushi bars. They're not all rail thin or at their ideal weight in the sushi places, but I don't see too many folks topping 300 lbs. in them.

    And highly processed food is generally the worst thing you can eat in terms of calories, fat, sugar, and salt. If you look in the shopping carts of morbidly obese people, that's what you tend to find (along with diet Coke). They're not eating tofu, arugula lettuce, bean sprouts, or any of the other foods that are more widely available than they once were. They're eating frozen pizza, and other high fat, high processed foods.

    Beans & rice (the great bulk of many agrarian diets for the past few thousand years) vs ground meat, bread, onion, lettuce, tomato, 'sauce', cheese, pickles, fries, ketchup, milkshake, soda . . . definitely more variety in the latter.

    The biggest danger is certainly not lack of variety over anything else, as you said.

    This is why diabetes is more rampant in poorer communities. With only 300 dollars for food stamps a month, it's streches more with TV dinners than bags of spinach.

    Or maybe people might stop and think that the size of the portions their great-great-parents ate so they could work in the fields from sun-up to sundown or for 12 hours a day in a factory before those nasty ol' unions interfered is not the same size portion they should be scarfing down to sit at a keyboard in a cubicle farm.

    Sanity in restaurant portions would help as well.
