    we used to contrast the difference as a mosaic here vs the American melting pot. for decades we actively encouraged newcomers to retain their comforts and customs while they organically made the place home. One of the best burger joints near me is owned by a Palestinian guy. Other than the fact he doesn't serve bacon, it's soooooooooooooo good.

    I think I'm going for more of a societal expectation than how well it works. Like that schoolhouse rock number about the "Great American Melting Pot"-you wouldn't ever be able to fly that on the CBC... even in the 70s.

    I was mildly amused at McD's one time (airport, needed food in a hurry) and they said they were out of hamburgers but could offer a cheeseburger. I pointed out that just skipping the cheese would convert it to a hamburger.

    If the burger is just a burger, no other toppings or condiments, then cheese is a must. But, ... after you add mayo, lettuce, tomato, pickles ... whatever else, cheese is optional.

    I suspect you mean rashers (strips of fat throughout, like thin-sliced belly pork), rather than back bacon (fat only on one side)?

    EDIT: or do you mean maple-cured? Yeah, that's just soaking it in syrup before curing. Brits do a similar thing with honey.

    generally we call Canadian bacon peameal or back bacon. the other stuff is just bacon.
    i sometimes bake it, hanging from the top grill of the oven and catching the drips on a cookie sheet.

    same as sausages... toss'em in the oven with a bit of vinegar to kill the grease.

    I will own to cutting the fat off smoked bacon and using it instead of parma ham in bolognese. But that's the only time, and just because the bolognese has enough oil from the olive oil.
