Out of curiosity, does Xenforo allow for more options beside M, F and Unspecified? Since we've got a number of trans folks and people are embracing non-binary labels, I figure it may be time to update that, assuming it won't break the board to do so.

The database is only equipped to handle 'male', 'female', or ''. If we ever wanted to upgrade the board software (which we probably should at some point for security reasons alone), changing that now would possibly break the upgrade process, especially if newer versions have other options for that column. The signup form template is possible to edit. I imagine the user profile template is as well.
Sounds like the database and/or software needs a transition. I'm honestly baffled why custom fields wouldn't be doable. It's not like we're running a 1998 Geocities webring. (Fun fact: my phone wanted to autocorrect "webring" to "sebring," both of which have been lost to antiquity)
