    I think that I'll try Alton Brown's method with the seasoning, and see how it turns out. If nothing else, the overnight soak in the buttermilk might impart a different element to it.

    For dinner last night, I combined equal parts KFC seasoning, cajun seasoning, and Montreal steak rub, slathered it on a hunk of cow, grilled it, then cut it up and used it in a black and bleu salad. Very tasty, even if the pic looks weird.

    Okay, so I tried the overnight soak in buttermilk, and it is really the way to do it. The flour mixture practically glued itself to the chicken, and it fried up beautifully.

    This morning, I thought I'd try making biscuits and gravy, using the gravy recipe. Instead of the chicken cracklins, I used breakfast sausage, and it works, but could probably benefit from some adjustments to the seasoning (maybe just a touch lighter on all of it). I, however, won't be eating it very often, as it's really easy for certain things to trigger me to get a migraine in the mornings, and I could tell when I started eating it that if I ate too much of it, I'd wind up with a nasty migraine.

    Yeah, I'm wondering if the batter stuck so much better to the meat because it had been "etched" by the overnight soak in the buttermilk.

    Popeye's tends to give me heartburn.

    I have KFC maybe once every couple of years.

    There's a local chain restaurant that sells better fried chicken than either KFC or Popeye's, so that's what I get when I don't feel like driving across town to get my favorite restaurant fried chicken.

    There's a place on the east side (read: predominantly African American part of town) with the best fried chicken I've ever paid for. The only chicken I've had that was as good or better was what my paternal grandma used to cook for us. :(

    My biggest issue with KFC* is the skin is often far too soft, even on the extra crispy.

    *This only applies to KFC in 'Murica. When I had it in Canada and Japan, they didn't offer extra crispy but the skin was well done anyway. In particular, KFC buckets are the meal of choice for the Japanese for Christmas dinner for some reason. :yes:

    So, tonight I tried another variation. Given that rice flour makes a great "light and fluffy" batter, I swapped it out for the all purpose flour in the recipe. Not a huge fan. It came out as something which sorta tasted like KFC, but not really, and it wasn't all that light of a batter. I might do some experiments with it in the future, but I'm certainly not going to be doing a straight swap again in the future.

    That may be a regional thing. As far back as I can remember, a Marshall Durbin truck has been delivering chicken to the local KFC.

    I am still mad that Roscoe's put its expansion in San Diego on hold but I can't really argue with them that they needed to find a better location. They had bought a location in Barrio Logan and a low income, high crime ghetto for Mexicans probably was not the ideal location for a soul food restaurant targeting white hipsters. It was like when they built a public market/perminent farmers market down in Barrio Logan then were surprised low income illegals don't generally buy organic heirloom kale smoothies for $10 a pop.

    Even this legal Mexican immigrant teacher in Barrio Logan says 90% of her students are illegals. I for one believe her as I have been down there.     BTW the owner of Roscoe's is black and he was the one who said he put the expansion on hold because he decided Barrio Logan didn't have the right demographics for his business, which I agreed with. Then you decided to lie and play the race card which is shameful trolling in the Green Room.

    Your reading comprehension is terrible. Stating a given place is a ghetto filled mainly with illegals in no way imply all Mexicans belong in Ghettos. Which school did you go to so I can make sure not to hire anyone from there?

    Also, no, just stop the lies. Calling illegal aliens illegals for short is not "dehumanizing" as it specifically describes their status. Also pointing out that one area is almost exclusively populated by illegals is a statement of fact even if that fact upsets you.

    Blacks make up two percent of the population, but there's plenty of military that would die for a decent fried chicken joint within driving distance of the base. Plus, the location wasn't that far from the trolley, so even new recruits out of boot camp could've gotten there. :shrug:

    I honestly think he was turned off because that location was so close to the homeless shelter thus there are lots of tents where homeless drug addicts are milling about. That doesn't make for good business.

    I suspect when they find a new location it will be in a high traffic area without tent cities or open air drug markets. A place where people with money to spend would be happy to go. He was probably pretty smart and dodged a bullet by changing his mind about that location.
