    "Consensus science", is a buzzword invented by right-wing propagandists.

    Like "micro vs macro evolution", was made up by creationists.

    That there's consensus only means multiple scientists have actually tested the claim, and the results of that testing agree.

    It doesn't mean a fucking opinion poll.

    Screaming that it is an opinion poll louder and louder, and with more mouths, won't make that true.
    Which oddly enough, is actually the strawman deniers want to paint real science as.

    I fucking am. Sure, it's raining like usual here in Portland, but it's also a solid 5-6° C warmer than it should be and I'm going around without a jacket.

    You know what goes good with gravy? Meat pies.

    AUSSIE MEAT PIE
    Ingredients
    • 1 onion finely chopped
    • 500g beef mince
    • 1 cup water
    • 2 beef stock cubes
    • 1/4 cup tomato sauce
    • 2 tsp Worcestershire sauce
    • 1 pinch salt and pepper *to taste
    • 3 tbs plain flour
    • 1 sheet shortcrust pastry
    • 1 sheet puff pastry
    • 1 egg to glaze
    Method
    1. Cook meat and onion until meat is well browned.

    2. Add ¾ cup water, stock cubes, sauces and seasonings.
    3. Bring to the boil and simmer for 15 minutes.
    4. Blend flour and the remaining water, add to meat, bring to the boil and simmer for 5 minutes. Cool.

    5. Line a pie plate with the shortcrust pastry.

    6. Spoon in the cooled meat mixture. Moisten edges of pastry with water.

    7. Top with puff pastry, pressing down to seal the edges, trim and glaze with egg.

    8. Bake at 230C for 15 minutes. Reduce heat to 190C and bake for a futher 25 minutes until golden.

    After I hit port in Australia in 2011, I discovered meat.pues and was very disappointed that we didn't keep these in American cuisine. :(

    It never occurred to me to use regular pie crust on the bottom and puff pastry on top. I routinely make both, depending on whether I want to make a pie or a turn-over, but never thought to mix and match.

    It's the standard method for pies here, gives you a sturdy base to hold onto and contain filling, but a light crispy top.
