WhatsApp claims that neither the company nor any third parties can possibly read my conversation. Is this true?

Could I, in theory, talk about illegal stuff with a trusted contact without concern, barring this contact having their device compromised?

Possibly. If you read the transcript of this podcast, you'll see that there's some issues with it.

This site has a listing of messaging apps that have been independently checked to ensure that they really are secure.

It is encrypted, but it is not safe, especially because it shares metadata with Facebook. Better (not perfect) privacy can be found at Threema or Signal.
