    I tried it a week or so ago. I'm going to try again, but with a lot less pepper! Holy Crap! and I like pepper.

    You didn't substitute black pepper for some of the white pepper, did you?

    I also wonder if all white pepper is equally well de-hulled. Maybe some has a little black pepper mixed in.

    I did 1 Tbs black pepper, and 3 tbs white pepper. :shrug:

    I could tell it would have been really good except for that. It was definately the best looking fried chicken I've ever made. I just marinated it in buttermilk overnight, and then shook the extra buttermilk off and double dipped in an egg wash.

    Hrm... Perhaps there was a bit too much breading (and thus pepper) stuck to it from the double-dip in the egg wash? I suspect they use a slightly different recipe for their extra crispy chicken, as the pepper and salt might be more noticeable. Or just cut back to two teaspoons black pepper.

    When I tried an experiment using 2 Tbspns black pepper and 2 Tbspns white pepper it was really peppery. Overwhelmingly slow. So the recipe is apparently pushing the limit on pepper. One of the keys to the recipe is that nothing noticeable stands out, which is why everyone had to make guesses about what's in it. Nobody could nail down even two or three spices that were definitely there.

    I did like my addition of 1 teaspoon each of tarragon, rosemary, and savory. My experiment with 21 herbs wasn't so good. It included corriander, cumin, and turmeric, perhaps making it too much like a curry flavor.

    I just tried an improvisational version that was pretty tasty. I had some plain frozen wings so I baked them at 250F for 20 minutes to that them out, and then left them in the oven for 15 more minutes or so.

    I was out of celery salt and mustard powder and I didn't want to waste too much white pepper on an experiment, so what I made was

    Straight from the original recipe:

    1-1/2 tsp thyme
    1-1/2 tsp basil
    1 tsp oregano
    1 Tbspn black pepper
    1 Tbspn ginger

    Deviations:

    2 Tbspn white pepper (instead of 3 Tbspn)
    1-1/2 tsp garlic powder (instead of 2 Tbspn garlic salt)
    1 tsp savory
    1 tsp rosemary
    1 tsp tarragon
    2 tsp Coleman's pure English mustard powder (extra zing - instead of 1 Tbspn regular ground mustard)
    1 Tbspn paprika (instead of 4 Tbspn)
    2 Tbspn cayenne pepper powder

    I just pan fried the wings for 12 minutes.

    It had a wonderful aroma and flavor (more herbs than KFC) and a bit more zing than KFC due to the Coleman's mustard and the cayenne pepper.

    I didn't miss the salt at all.

    I can't eat catfish, but for fun tonight I added corn meal flour to the mix, and I have to say that it'd work perfect for catfish.

    Makes me nauseous for some reason. Doesn't matter how it's prepared., or even if I know what it is, I still feel like I'm going to barf shortly after I eat it.

    Made another batch last night to do something different to get rid of some chicken that was about to go bad. Since I had a surplus of batter, I again looked for stuff to fry up besides the chicken. I did potato wedges, and that worked quite well. I also did some shrimp, which also worked quite well. And, it turns out that cats go apeshit over KFC.
    (That, BTW, is not the weird part of that story.)

    I normally prefer to do my own cooking, but fried chicken is something I'd rather leave to professionals.

    I'd probably spend like four hours cleaning my kitchen up after attempting to fry something, and the whole place would smell of oil for days.

    I figured out how to solve that problem real quick, I use a fryer like this one. I don't fry in the kitchen, I'll set it up on my back deck, then take it back in when it cools off. No oil smell in the house.

    Yeah, about the fanciest kitchen appliance I own is a tea kettle. And I live in Wisconsin, so anything on the deck will probably be frozen solid in 1.4 seconds.

    I'll stick with Popeye's. Or the grocery store's fried chicken. :)

    Lots of people say that air fryers are awesome. They're supposed to be better than regular frying. I've never used one, so I don't know.

    I mean anything from fish to egglplant (to other vegetables) to portobello mushrooms to turkey legs or cutlets, among other things?

    The notebook versions of it are clearly what Sanders was using when he was tooling around in his car, selling his franchises, they yield the best goddamned gravy ever. Things like egg powder, milk powder, and MSG are clearly the stuff that was added when he sold the company out and they wanted to cut costs, why would I want to make that? Because it tastes like what they sell now? Got news for you, son, their current gravy ain't all that, and neither is their chicken. I'll stick with the original. :bailey:
