Culture and ethnicity are real and can be distinctive and often provoke the "hate the others" sort of bigotry that plagues our society.

Biological "race" is simply a paradigm those who feel the need to hate the "other" takes refuge in.

In other words, you can imagine that race is a real thing, and look down on or hate folks of a "lesser race" and insofar as it panders to your bigotry, "race" is a real thing TO YOU and therefore when a liberal calls you racist, that's what is being referenced. Because in your bigoted mind "race" is a thing that matters.

That does not, however, make it an objective thing apart from that bigotry.

Moreover, one can be quite bigoted without being "racist" because bigotry is often directed at groups of people - Muslims, Hispanics, gays, whatever - that are not and never have been considered a "race" in the same way blacks once were.
