YES, it's proper to acknowledge that detail might have been fuzzy when that is the most factual account. BUT I'll also argue that the VITAL details should be right (such as what charges he was arrested on, for example) and the fringy details like the idea he doxxed himself...? Meh. How would they know? If you’re on the lam, I doubt you’re ordering pizza under your own name. Certainly having only 25 locations to check helps. Why would there be a central ordering system?

Even if you accept the official police story that it was other things in the video that enabled them to find him, the fact that a wanted individual was arrested because they posted a video on social media indicates we’re not exactly dealing with a master criminal. So, no, I would not at all be surprised to find out that he used his real name when ordering the pizza.
online order using a credit card? how many orders within the preceding day or two were paid for with foreign credit cards? probably a dozen ways they can eliminate 95% of the orders that weren't him and a dozen more that'd stand out... no idea about where you live, but like Tucker says, a) why wouldn't they have a call centre/server farm? and b) dude's a little on the arrogant side already, so being sloppy (if he was even aware of the warrants?) doesn't seem liek a stretch.
It's possible. The cops deny it was the pizza. I guess I just usually call in my pizza orders, which are not handled centrally, even for giant chain pizza, rather than ordering them online. It's pretty weird that for all the time he was there, he only got sloppy this once, so I'm inclined to believe the police that the pizza had little to nothing to do with it.

The economics of how pizza joints operate in Romania are certainly different than how they are in the US. I don't know what their child labor laws are like there, or really much of anything, but given what we do know, there's absolutely going to be some differences between the US and Romania. Pizza joints in the US started springing up after WWII because of immigration and vets returning from WWII. Romania was behind the Iron Curtain from the end of WWII until communism fell in the 90s, can't imagine that too many pizza joints opened in Romania between the years of 1945 - 1989. Might have happened, don't know. Wouldn't be surprised if it didn't. According to this, Jerry's Pizza opened in the early 90s and is owned by an American businessman. I don't think that it's outside of the realm of speculation that the guy showed up in Romania, discovered that pizza places weren't really a thing, and started a chain. Assuming that he walked into a market with almost no competition (so the potential for profits to be high is large), and that he wanted to ensure that he was able to maintain his lead over others, I can well see him pulling from a number of different industries to ensure that he maintained his edge over others. So, a centralized call center to handle all the orders makes sense. You don't have to have any staff in your store dealing with phone orders, they can work on prepping the food, and dealing with customers in meatspace. You can also standardize training better than you could if each individual store did it. Not to mention, if you go in expecting your operation to be a large chain, even if you're only opening one store, you might very well choose to do things differently in the beginning than someone who just opens up a pizza joint that later becomes so successful that they think about franchising it.
Supposedly, what the video did was provide proof that both Tates were in the same place in Romania. Okay, but these guys aren't petty crooks. They're human traffickers. So long as just one of them is walking free, shit's going to be bad for people. Are you worried that if you arrest one, the other one will kill himself before you can get him? Not seeing the problem. If you take human trafficking seriously, then you want these guys off the streets ASAP, and if you can only get one today, that's better than nothing.
