I don't have pictures, but today my family did ribs, brats, hot dogs, veggie and beef skewers, veggie and tofu skewers (I'm vegetarian), and pineapple skewers. Plus a homemade key lime pie and 3 rounds of margaritas.
Forgot to post these last night: Sorry about the picture quality of the last one, but it took all I had to be able to concentrate on taking that lost photo and not fall down.
My despair at a lack of grilling space is being tempered by a new food truck that sits not a block from my building, and serves absolutely delightful ribs, BBQ chicken (actually barbecued, not grilled!), hush puppies, and potato salad with bacon and mustard. I have yet to try their brisket or pulled pork sandwiches.
Mr. Pork Shoulder begins his overnight bath in a molasses brine. He'll get out of it in 12 or 13 hours.
I get a lot of planes flying over my house, either headed to the big airport or to Lackland AFB. I've got a lot of trees in my yard, though, so I get glimpses of them, at best. Today a B-25 flew over while I was cooking. It looks like it's wearing Soviet markings.
Nice, one of my favorates there. Speaking of planes flying over, the new gig is in the flightline of Ellington and there was a Blackhawk that flew over yesterday. Can't wait for the airshow this year. One of the guys says he saw a NASA guppy fly over which is stationed there. Anyhow, not to derail, I sure lurves me some charred beef. And no, I still haven't drug my pit out of the weeds yet. Hopefully by the fourth though.
Speaking of Soviet markings, our ship happened to hit port in Russia last October, and those guys still have plenty of mementos of their Communist history, form T-shirts to coins and anything else. I was...rather surprised, to say the least. Back on topic: Mmmmm, pork shoulder.
I've been improving on the previous picture. For the steak: Mix finely ground coffee, brown sugar, some kosher salt, and a little bit of black pepper and paprika. Thoroughly coat both sides of a New York strip steak and grill over charcoal. For the glaze: Pour a bottle of dark beer into a pot and start it boiling. Throw in some butter and brown sugar and keep boiling until about three-fourths of the beer is gone. (This time, I also poured in a little Jack Daniels steak sauce.) To finish: As the steak's second side is nearly finished, drizzle some of the glaze over it. (Not recommended unless you're done with the grill, since it's kind of like pouring water over the coals.) After plating, pour a little more on top. Served with Leon's Potato Salad, Tony Packo's pickles and peppers, and Hawaiian sweet rolls.
Tried something new today, pizza on the grill. Bought 2 - 12x12 unglazed quarry tiles. Placed them on the grill set to high, let them heat for about 10-12 minutes and placed small 10 inch pizzas on them. Here's the last one, the rest got eaten. Grilled them with the lid closed, 7 minutes came out to be the best amount of time. They shrank to about 8 inches.
Machete in hand, I venture forth to irradicate the jungle surrounding it tomorrow morning. I screwed up and cut my fifty dollar heavy duty water hose with it last week after I put the grinder to the machete and it slices through the shrubs a little better than I was used to. Needed to make a change to the system anyway. Well, not really but I toought it sounded good for a second or two there. I do have a slab of pecan and will pick up some apple wood for it. I need to get the brisket picked up this weekend too. I just hope there isn't a red wasp nest the size of my fist in the stack.
Alas the rains came over the weekend as well as today and it was not ment to be apparently. I did however manage to get the little smokey fired up over here this afternoon when it cleared up and get some sausages and angus dogs smoked. I would have put the ribs on as well but the wife missed the memo and stuffed them in the crock pot this morning. I sure as hell wasn't going to say anything about it other than you must have missed the memo.
Ya know you'd think that if you spent $400 on a smoker the damned thing wouldn't rust the first time the kids forget to put the cover on it So I spent hours today in the sun sanding the ever loving shit out of the smoker to get at every speck of rust. Then I sprayed the first coat of Rustoleum High Temperature paint on it. Gotta run back to Home Depot and pick up more paint and put on the second coat.
