How do I keep the spice on chicken when it's last minute? i.e no marinading Also no deep frying. Basically, so far, I'm been drowning my sliced chicken breast in spices (this time, paprika and garlic salt, and obviously salt and pepper), then shallow frying it. But I can't taste the spices at all! What do I do?
Avoid frying... Make a rub, then bake or grill. Last-minute spicing works best with dry cooking. If you need to shallow fry, add some breadcrumbs and oil to make a schnitzel. Alternatively you could knock up a quick yoghurt or cream sauce with the spices?
