So to be clear there is a a reason that Kraft Singles, Velveeta and their knockoffs have to call themselves Pasteurized Prepared Cheese Product and not just cheese. Because they aren’t cheese. On the other hand it also means they have a higher emulsification temperature so are the superior ‘cheese product’ for cheeseburgers, cheese dip, Santa Fe soup, beer cheese soup, etc as the oil doesn’t leech out before you get it hot enough to get melty.
