So to be clear there is a a reason that Kraft Singles, Velveeta and their knockoffs have to call themselves Pasteurized Prepared Cheese Product and not just cheese.

On the other hand it also means they have a higher emulsification temperature so are the superior ‘cheese product’ for cheeseburgers, cheese dip, Santa Fe soup, beer cheese soup, etc as the oil doesn’t leech out before you get it hot enough to get melty.

I say that not to distract from the fact that UA is an ignoramus or that in non-heating situations pretty much every cheese is superior but just to say that ‘American Cheese [product]’ has its place and I think it gets a bad wrap.
