Habanero ideas

    So I have bought Habanero chilies. They are so good it's kind of a waste to just chop them up and throw them on the chinese food. Anyone got some good recipes? And yes I know there's Google but I want 'specialities' ;)

    Chop up and mix about 60% fresh, ripe tomatoes with about 40% chopped onion. Add some chopped fresh cilantro. Squeeze a lime over the mix and stir in some salt. Add a few chopped peppers, but be warned the flavors & heat will change after blending and resting. Chill the salsa to let the flavors blend.

    You now have the perfect topping for tacos, eggs, hot dogs, chips, anything ya want.

    You can also add some rinsed and drained black beans. I can not stress enough the quality of the tomatoes.

    Make a cheese and habenro filled burger.

    Get a mild cheese, like a mild cheddar, gruyeré or something similar and grate about a small handfull per burger. Chop the Habenero's finely, about a teaspoon full per burger.

    For the burger meat itself use about a kilo of minced beef, preferably not too lean, and mix in a teaspoon of ground coriander seeds and ground cumin seeds (grind them yourself in a pestle and mortar) and mix with a tablespoon of light mustard, an egg, a handful of breadcrumbs and a handful of freshly grated parmesan. Season with salt and black pepper, mix and then form around the cheese/habenero mixture so that the cheese mixture is completed insulated within.

    Cook!

    When I make burgers I always do extra and freeze some for a later date so that I don't have to make them from scratch every time I fancy them.

    I assume you have not yet discovered the invention they call a freezer.

    One of the most horrible experiences of my life was when I was making salsa and I didn't wash my hands enough before going to pee. It took about a minute before the burning set in and I realized my mistake. I spent the next 10 minutes taking a cold shower. :lol:

    Indeed. Same with drinking after a slight chili overdose. Water or beer do nothing. Capsaicin is soluble in milk so that helps.

    Capsaicin is soluble in alcohol. If beer isn't helping then you're drinking the wrong kind or too little.

    Sugar water also helps. 10% sugar to 90% water.

    Frozen ground chuck sucks donkey balls, so I don't make burgers from frozen ground chuck.

    Oh and ice cream. Especially whole milk fatty ice cream. The fats in milk are soluble with the capsaicin. The coldness of the ice cream also helps soothe the tongue.

    Dice Habaneros extra fine. Maybe even turn about 6 of them into a puree. Add the habaneros (pureed or not) to a pot of chili accompanied by an entire bottle of Sriracha, a 5th of a pot of kimchi and a bottle of Teriyaki sauce. Bill it, "East Meets West." The sweet and the inferno hot will intrigue your tasters and make them praise you. Last step: profit.

    Meh, I'm of two minds. I like a little cilantro. But, far to many people put so much of it into dishes that cilantro is all. you. can. taste. My wife does that with her salsa and it makes me a sad panda. :(
