I have been watching some cheese making videos on youtube including one by an Australian fellow who made some cheddar cheese wheels which he then aged for a full year. There were a lot of other ones which looked interesting like mozzarella and ricotta (which, apparebtly is something useful to do with the left over whey). I am kind of fired up and thinking about going to Costco to bulk buy some whole milk and maybe some cream. The one thing holding me up is I still need to buy a cheese press and some of the specialty ingredients but I would love tp hear if other people have any cheese making experience.
