As I'm sure you actually know, it's a symbol of sacrifice to them. The greatest thing about Jesus to them isn't the content of his ministries, but the sacrifice he made by dying on the cross. Some people have suggested using the fish as a symbol instead, but I'm not sure they could bring themselves to sing "When I behold the wondrous fish..."

Really? The culmination of the Christian salvation myth is Jesus dying on the cross with the burden of all humanity's sins (and later returning from the dead). The cross serves as a reminder to Christians of what Jesus's death was for. The cross was also viewed by early Christian converts (i.e. barbarians) as a symbol of strength and victory over death making Jesus the ultimate badass. Seems pretty logical and appropriate to me.
