What are you saying? That his staff is now making decisions for him (there's ample evidence, but I'd like to see you say it)? Or that they don't have phones in NY? What's he doing in NY? Bullying Wall Street to get back on its feet in spite of China's retaliation? Or just watching the ticker to see how much $ he made this week?

You'd be correct in that assessment. This podcast is hosted by a classmate of Rosenstein's from law school and he lays out a couple of reasons why it's bullshit. 1. Because of his position in the government, were Rosenstein to wear a wire, it would be fairly easy for such recordings to be tossed out in a court of law. 2. Due to the nature of the 25th Amendment, it is not an effective way of getting rid of Trump, unless the evidence is so overwhelming that he's incapable of doing the job that only a fool would object to his removal. So, Rosenstein would have to obtain evidence, in a legally dubious manner, that was so conclusive that 2/3rds of the members of both houses of Congress would agree Trump needs to go. Rosenstein's no dummy, he knows this, and I can't imagine him even joking about it. (He seems to be one of those super-serious types, unlikely to make too many jokes.)
Actually him being a serious-type is why I believe he was being sarcastic about it. The reports say McCabe was throwing a fit over Trump and Rosenstein sarcastically said, "What do you want me to do? Wear a wire?" I could easily see that happening. Rosenstein didn't actually deny he said it in his public denial about it. He gave a lawyerly response. And it's not just 2/3rds of both houses in Congress. It's also the Vice-President (who would start the ball rolling as per the Constitution) and a majority of the cabinet. Which is why I don't understand why some on the left keep trying to bring it up. Really the 25th Amendment is more of a medical thing. A president has had a stroke or something and is medically incapacitated.
For a meeting that was already scheduled. Which was provided to the media. The meeting wasn't a secret. Work doesn't stop at the White House because POTUS is not there.
I saw interesting speculation on another site (clearly labeled "speculation" there and it's sure as hell speculation here) that Manafort's value is that he gives Mueller a line of attack on to Pence, who's brother is a major executive with Cummins which has deep business interests in Ukraine. Like all conspiracy theories it's got enough just enough dots that connected in a certain way lead to a certain conclusion. It's mainly interesting because Pence, whatever else you want to say about him, has made a very smart play by keeping his head down and basically hiding in a closet. It would be a great example of . But I'm not holding my breath.
Trump has postponed the meeting with Rosenstein, probably because he wants to see how the Kavanaugh stuff (AKA Operation: Shield The President) goes first.

That's the defamation lawsuit, the other lawsuit is still going forward and Avenatti says they'll appeal this ruling.
