A couple of weeks ago my mom gave me two bags of leg quarters. She volunteers at her church's food bank and, when they have leftovers like this, she'll often give them to family members. I don't really like leg quarters because they're harder to cook and awkward to eat, but free chicken is free chicken. I could've cut them up, but I didn't feel like it. I marinated them in tequila for three or four hours before cooking them. When they were almost done, I brushed on a lime juice and agave syrup glaze. It was freakin' good.
I actually like leg quarters more than anything else when it comes to parts. Those look good -- did something similar once with Cornish game hens. Cut them in half laterally, marinated in tequila, then used jalapeƱo jelly as a glaze.
I prefer separate legs and thighs so they cook faster and more evenly. It's easy to overcook the rest of the quarter while waiting for the joint area to get done. Plus separate legs and thighs are easier to eat.
I'm surprised how little the bottle "spewed" considering how long AB was holding it in his bare hand. Then again, the bottle may have been warmer because it was sitting out for a while before he sabered it.
What are people's plans for Memorial Day? I'm thinking spare ribs on my Weber, and a clam bake on my fire pit. Both are fairly low fuss, and great for hanging out with some beers while the fires do the work. I haven't actually done the clam bake before, but as the kick-off for Summer in New England, it seems like something that should happen.
I'll be grilling some salmon this evening. I under utilized the "outdoor kitchen" last year, plan to change that.
