Could be you just don't have that combination of creativity and lack of drawing skill that makes coloring books so attractive. I like colors, I like arranging colors all artistic-like, but I can't draw. I wouldn't go out and get a coloring book, but put one in front of me with nothing better to do and I'd happily color away.

I actually saw books for Doctor Who and Harry Potter in the local supermarket this morning.

Okay, now even Walmart has coloring books aimed at adults for Doctor Who, Star Wars, Harry Potter, and Game of Throne for sale.

Can anyone seriously suggest that if those are commercially viable then Star Trek themed coloring books would not be?

    These aren't new, actually.

They didn't call them "adult coloring books", but they had ones with complex geometric patterns, and stain-glass window looking things where no kid could possibly handle getting inside the lines of those.
It was just silently understood they were for adults.

They were underground big, no one blabbed about it on the news or nothin', and there was no internet to despair over it.
    No one was ashamed either.
People just bought 'em, and did 'em, and that was that.
    Dunno why they went way.
    They just did.
People did a lot of artsy crafty stuff before video games.
Coloring, origami, paper dolls, elaborate cookie designs, ceramics.

Dunno if it was video games, or cable, or VHS porn, or all of the above, but people stopped doing stuff.
