Luke would likely say he was a navigator I think Luke would probably say something about Anakin being a navigator on a spice freighter. Also, it would be good to set this about ten years before ANH because when Luke does encounter Obiwan, it seems as if he hadn't seen him in a while.
Yep, better. Yes, and Obi-Wan's dialogue ("I understand you've become quite a good pilot yourself") would seem to indicate a fairly long time since their last interaction. I'd make Luke about 12. Don't want to pull a Phantom Menace and make the character too young.
Inside sources say the third anthology movie will be the Obi-Wan prequel between ROTS and Rogue One, but the Boba-Fett flick will also happen, but be a bounty hunter ensemble movie rather than a Boba standalone.

The creator of Mr. Robot wants to write the Obi-Wan movie. http://www.cbr.com/rumor-star-wars-anthology-mr-robot/ If this pans out...
IIRC, Timothy Zahn did the Tonnika Sisters story in the Tales From the Mos Eisley Cantina collection. Speaking of Zahn, Thrawn's been recanonized
