I concur with the sadness that comes from seeing canned spinach used in a recipe. Fresh is the way to go. If you don't like the taste of spinach much big bags of baby spinach are good. Vinegar has no calories unless you're guzzling whole bottles of the stuff, a little bit of citrus goes a long way especially if you're using zest, and olive oil is a healthy fat where again a little goes a long way.
Or, grow greens yourself. I made a wicking bed out the front of our place, so we have leafy greens to pick pretty much whenever we want them (I tend to harvest in big batches for spanakopita or palak paneer)
Vinegar on a salad is pretty healthy along with some virgin olive oil. I can actually down a whole bottle of the stuff. It is probably not so hot if you have acid reflux or stomach ulcers, but it is pretty healthy. citrus would probably be pretty healthy too. If you are only using vinegar and oil and not some bottled dressing or a thick dressing it is not going to add bad to the salad. Some of the dressings I see add sugars and other crap to the salad making it not so healthy.
Eh. It depends upon what you're making. There are times, for example, when one is making something that you absolutely want to use "average" ingredients. A Philly cheesesteak sandwich that uses Kobe beef and high-quality cheddar cheese, is really a waste of good ingredients. Sure, it might be tasty, but those ingredients would taste far better in any of a number of other dishes.
I worked in a kitchen where they specialized in cheese steaks, and what you want to use is a good cut of roast beef. Get it thick sliced at the deli and it cooks up real quick and easy.
I was never a huge fan of ranch on anything other than wings ... until I got a recipe in a meal kit service I was doing for a while. Turns out the thing that makes ranch kind of cringey is the mayo. Find it without mayo and it'll be cool, crisp, and not fatty or greasy.

This is from my favourite local place. 3 day sourdough base (only ingredients are water, flour, and salt) with a sauce that's basically just blended good quality tomatoes, topped with fior di latte and fresh basil. Nothing nasty at all.

Was in the mood for boutique 'za so we ordered from here last night... had the Tropic Thunder and an order of garlic fingers (which is really just a garlic bread built on a "small" pie). Kinda pricey, but a lot better than the local default Pizza Pizza, or chains like Dominos or Lil Caesar's (which aren't worth mentioning anyways)
