I wouldn't mind seeing that as part of a prequel, but would rather see it focused on a human character (Mace Windu?) than a CGI/muppet thing.

Not too surprising. If the directors got fired so late in the shoot because the producers didn't like the way the movie was headed, it wouldn't be unexpected for many of the scenes to be reshot. Lord and Miller were--apparently--making a screwball comedy, so the tone of all the scenes they shot would've been all wrong, and so would've needed to be reshot even if the dialogue or action didn't change. Actors are going to perform the scenes differently to fit the tone.
Our first glimpse of Alden Ehrenreich as Han comes from...A CUP!! But remember, we got our first look at red arm Threepio on a soda can.
