    Mike's eggplant parm recipe

    Take a big eggplant.
    Cut it into 4-6 slices, depending on how big it is.
    Grate some Parmesan, mix it with breadcrumbs.
    Beat an egg, add a little milk to it.
    Coat the eggplant slices in the egg, then dredge in the Parmesan/breadcrumb mix.
    Put them on a baking sheet sprayed with olive oil.
    Bake about 20-25 minutes at 375.
    Take out of the oven.
    Top with marinara sauce and shredded mozzarella.
    Put back in the oven.
    Bake another few minutes.
    Take out of the oven.
    Eat.
